Sriracha Sesame Salmon with Mango Salsa
Ingredients (Salmon)
2 (6 oz) filets of Skin-on Salmon
1 t salt
3 T Sriracha hot sauce
2 t honey
1 t sesame oil
garnish sesame seeds
Ingredients (Mango salsa)
1 mango, diced
1 tomato, diced
1 jalapeno, minced
1/2 avocado, cubed
1/2 cucumber, diced
3 T scallions, thin sliced
2 t apple cider vinegar
1 t olive oil
1/2 lime juiced
pinch salt
INSTRUCTIONS
Preheat oven to 400 degrees.
For the Salmon glaze, mix together salt, Sriracha, honey and sesame oil. Brush onto fish filets on a parchment lined sheet tray
Bake Salmon for 10-12 minutes (less if you like yours closer to medium/medium rare). The skin can be removed once cooked. Sprinkle with Sesame Seeds.
For the mango salsa, mix together all ingredients in a large bowl and let sit for at least 10 minutes so flavors soak in.
Serve Salmon and Salsa for a simple lunch or dinner, leftovers can be used in a lettuce wrap or tortilla for simple fish tacos!
