Sriracha Sesame Salmon with Mango Salsa

Ingredients (Salmon)

  • 2 (6 oz) filets of Skin-on Salmon

  • 1 t salt

  • 3 T Sriracha hot sauce

  • 2 t honey

  • 1 t sesame oil

  • garnish sesame seeds

Ingredients (Mango salsa)

  • 1 mango, diced

  • 1 tomato, diced

  • 1 jalapeno, minced

  • 1/2 avocado, cubed

  • 1/2 cucumber, diced

  • 3 T scallions, thin sliced

  • 2 t apple cider vinegar

  • 1 t olive oil

  • 1/2 lime juiced

  • pinch salt

 

INSTRUCTIONS

  1. Preheat oven to 400 degrees.

  2. For the Salmon glaze, mix together salt, Sriracha, honey and sesame oil. Brush onto fish filets on a parchment lined sheet tray

  3. Bake Salmon for 10-12 minutes (less if you like yours closer to medium/medium rare). The skin can be removed once cooked. Sprinkle with Sesame Seeds.

  4. For the mango salsa, mix together all ingredients in a large bowl and let sit for at least 10 minutes so flavors soak in.

  5. Serve Salmon and Salsa for a simple lunch or dinner, leftovers can be used in a lettuce wrap or tortilla for simple fish tacos!
