Kale & Cauliflower Tabouli

Ingredients

  • 2 C cauliflower rice

  • 1/2 C grated carrot

  • 1 bunch kale, chopped

  • 2 tomatoes, diced

  • cucumber, diced

  • 1/4 C parsley, minced

  • 1 T dijon mustard

  • 1 lemon, zest and juice

  • 3 T olive oil

  • 1 t garlic, grated

  • salt & pepper

 

INSTRUCTIONS

  1. Toss together cauliflower, grated carrot, kale, tomatoes, cucumber and parsley.

  2. In a separate bowl whisk together dressing ingredients: dijon, lemon zest and juice, olive oil, garlic, salt and pepper.

  3. Toss dressing into kale and cauliflower mixture and let sit for at least 10 minutes so the flavors soak in.

  4. Serve as a side dish or as a salad with grilled chicken or shrimp!
