Pumpkin Mac & Cheese

Ingredients

  • 2 boxes Banza Chickpea Pasta

  • 1 can Pumpkin Puree

  • 2 C cheddar cheese, grated

  • 2 C milk

  • 1/2 C parmesan cheese

  • 1 t nutmeg

  • 1 t mustard powder

  • 1 t hot sauce

  • salt

 

INSTRUCTIONS

  1. Cook pasta following package directions, you can use any fun pasta shape you like, I love Banza Chickpea Pasta shells, they have a tasty nutty flavor, are gluten free and hold their shape with heavy sauces.

  2. While pasta is cooking, prepare cheese sauce, heat milk in a small pot and whisk in salt, nutmeg, mustard powder and hot sauce and pumpkin puree

  3. Over low heat slowly whisk in cheeses, a little at a time so it doesn’t clump up.

  4. Mix cooked pasta into cheese sauce, you can pour into a baking dish and bake for 10-15 minutes with parmesan sprinkled on top or you can eat without baking! I usually don’t have patience to wait for it to cool so I indulge right away!
