Pao De Queijo - Gluten Free

(Brazilian Cheese Bread)

Ingredients

  • 1 C whole milk

  • 1/2 C vegetable oil

  • 1 t salt

  • 2 C cassava flour

  • 2 large eggs

  • 1 1/2 C grated parmesan cheese plus more for sprinkling on top

 

INSTRUCTIONS

  1. Preheat oven to 450 degrees.

  2. Boil milk and oil together, remove from heat when you see bubbles.

  3. Stir in cassava flour and salt, dough will come together and be very grainy.

  4. Keep mixing dough until it has cooled down, beat in eggs one at a time.

  5. Beat in cheese, dough will be very sticky and thick.

  6. Chill dough for at least 30 minutes, this will help when it comes to forming them.

  7. Brush oil on your hands, the oil will help dough from sticking to your hands and portion dough into 1 oz rolls, place 1 inch apart on a parchment lined sheet tray. Sprinkle with extra parmesan cheese on top.

  8. Bake for 20-25 minutes, they don’t get too golden on the outside.

  9. Let cool for at least 5 minutes before enjoying - they are best eaten warm. I use these as gluten free slider buns or pulled pork buns!
