Kale and Zucchini Shakshuka
Ingredients
2-3 C marinara sauce (I like to use Rao’s Marinara)
1 t salt
1/2 bunch kale, chopped
1 zucchini, sliced
2-3 eggs
1/2 avocado, sliced
olive oil
salt and pepper
INSTRUCTIONS
Heat a non-stick pan with olive oil.
Saute kale and zucchini until kale has wilted.
Add in tomato sauce and stir all together. Season with salt and pepper.
Using a spoon create an indent in the sauce mixture where you want to pour your eggs. Pour your eggs into a separate bowl first, then gently into the tomato and veggie mixture.
Cook for another 3-4 minutes until eggs are cooked through.
Transfer to a serving plate and top with avocado!
Shakshuka’s are a great easy breakfast because you can mix and match proteins and veg based on what you have at home and love to eat AND you can make them individual or large enough to feed a crowd.
