Ingredients (pie dough)

  • 1 1/4 C flour

  • 1 t salt

  • 1/2 C (1 stick) cold butter, cut into pieces

  • 1/4 C ice water

Ingredients (Fillings)

  • Blueberry: 1 C blueberries, 2 T sugar, 1/2 lemon juice & zest, 1 t arrowroot, pinch salt

  • Apple Cinnamon Walnut: 1 C apples pealed and chopped, 2 t cinnamon, 1 t lemon juice, 1/4 C chopped walnuts, 1 t arrowroot, pinch salt

  • Strawberry Cheesecake: 1 C strawberries chopped, 2 T sugar, 1/2 lemon juice & zest, 1/4 C cream cheese 1 t arrowroot, pinch salt

 

INSTRUCTIONS

  1. Preheat oven to 375 degrees.

  2. For the pie dough, stir together the flour and salt, add in the cold butter and using a fork, pastry cutter or your hands begin to crumble until butter pieces are the size of peas.

  3. Slowly add in a drop of water at a time until dough comes together and forms a flat disk. Wrap with saran and chill for 15-30 minutes.

  4. For the fillings: All fillings can be stewed down in a small pot, make sure fruit pieces are cut very small. Filling can be made 1-2 days in advance as well.

  5. Once pie dough has chilled, roll out dough until thin use bench flour if it starts to stick to table, using a 3 inch circle cutter, cut disks out of the dough - dough scraps can be re-rolled once.

  6. Place 1 tablespoon of filling in center of pie dough disk, using egg wash brush sides and top with another piece of dough, press to seal and use a fork to crimp.

  7. Brush the top with egg wash and sprinkle with sanding sugar. Bake for 15-20 minutes until golden. Let rest 10-15 minutes to cool.

  8. Get creative with your fillings! Omit the sugar topping and these can be SAVORY hand pies with ham and cheese for example YUM!
