Grapefruit & Avocado Salad
Ingredients (Salad)
- 1 avocado
- 1 grapefruit
- 1/2 fennel bulb
- 5 grape tomatoes
Ingredients (dressing)
- 1 T whole grain mustard
- pinch salt & pepper
- grapefruit juice (from 1 grapefruit)
- 1 t apple cider vinegar
- 1 t honey
- 1/4 C olive oil
INSTRUCTIONS
- Thin slice avocado, fennel and tomatoes. For the grapefruit supreme the segments so just the flesh and not the skin come off (do this over a bowl to catch all the juice for the dressing).
- Assemble all salad ingredients on a flat plate layered on top of each other.
- For the dressing, whisk together the whole grain mustard, salt, pepper, grapefruit juice, apple cider vinegar and honey, slowly drizzle in the olive oil until it begins to thicken.
- Drizzle dressing on top of salad, do not toss, let dressing sit on top of salad.
- If your fennel came with the green fronds you can use those to garnish your salad as well!
