Grapefruit & Avocado Salad

Ingredients (Salad)

  • 1 avocado
  • 1 grapefruit
  • 1/2 fennel bulb
  • 5 grape tomatoes

Ingredients (dressing)

  • 1 T whole grain mustard
  • pinch salt & pepper
  • grapefruit juice (from 1 grapefruit)
  • 1 t apple cider vinegar
  • 1 t honey
  • 1/4 C olive oil
 

INSTRUCTIONS

  1. Thin slice avocado, fennel and tomatoes. For the grapefruit supreme the segments so just the flesh and not the skin come off (do this over a bowl to catch all the juice for the dressing).
  2. Assemble all salad ingredients on a flat plate layered on top of each other.
  3. For the dressing, whisk together the whole grain mustard, salt, pepper, grapefruit juice, apple cider vinegar and honey, slowly drizzle in the olive oil until it begins to thicken.
  4. Drizzle dressing on top of salad, do not toss, let dressing sit on top of salad.
  5. If your fennel came with the green fronds you can use those to garnish your salad as well!
