Zesty Edamame Hummus

Ingredients

  • 1 10oz bag shelled edamame

  • 1 lemon juice and zest

  • 2 T tahini

  • 1 T nutritional yeast

  • 2 T water

  • 2-3 T olive oil

  • 1-2 cloves garlic

  • pinch salt

 

INSTRUCTIONS

  1. In a blender combine all ingredients.

  2. Blend on high until fully pureed, add oil and water as needed to puree, you want it to be very smooth. Taste and season as needed.

  3. Hummus will thicken when in the fridge.

  4. Serve as a dip with crudite or as a spread on a sandwich or dolloped on your next salad or grain bowl! Go crazy!
