Chubby Choc-Chip Cookies!

Ingredients (pie dough)

  • 1 C cold butter

  • 1 C brown sugar

  • 1/2 C sugar

  • 2 eggs

  • 1 t vanilla

  • 3 C flour

  • 1 t cornstarch

  • 1 t baking soda

  • 1 t salt

  • 1 C chocolate chips

  • 1 C chopped walnuts

 

INSTRUCTIONS

  1. Preheat oven to 400 degrees.

  2. In a stand mixer with a paddle attachment (can be done with a hand mixer or by hand too) cream together cold butter, brown sugar, and sugar until creamy.

  3. Add eggs, one at a time, mixing well after each one and mix in vanilla.

  4. Stir in flour, cornstarch, baking soda, and salt. Mix until just combined. Stir in chocolate chips and walnuts.

  5. Separate dough into large cookie dough mounds (you can make them as large as you’d like, I tend to get 12 cookies from this recipe) the smaller they are the less time it takes to cook.

  6. Place on a parchment lined cookie sheet, I use a rubber silpat as well to prevent the bottoms browning but you can double up on parchment paper as well.

  7. Bake for 9-12 minutes or until golden brown on the top. Let them rest for at least 10 minutes to set. Once fully cooled you can always pop them in the microwave for 8-10 seconds to warm them up again.

  8. You can bake all cookies at once or keep cookie dough frozen in balls for when emergency cookie cravings sneak up!
