Cauliflower Gnocchi

Ingredients

  • 12 oz cauliflower rice

  • 2 C cassava flour

  • 2 T nutritional yeast

  • 1 t salt

  • olive oil

 

INSTRUCTIONS

  1. Steam cauliflower rice in the microwave until tender.

  2. Mix steamed cauliflower with cassava flour, nutritional yeast and salt.

  3. Knead dough until smooth, depending on how much moisture was in the cauliflower rice it may need more cassava flour to form a dough that is not sticky on the hands.

  4. Form Gnocchi by either rolling 2 teaspoon pieces of dough with your hands OR rolling whole dough into a long snake and cutting 2 inch pieces off. Use cassava flour if it starts to stick.

  5. Heat oil in a non stick pan and fry gnocchi in batches, do not over crowd the pan.

  6. You can eat these simply with parmesan, or toss with pesto or with your favorite tomato sauce, the possibilities are endless.
