BBQ Meatloaf
Ingredients
2 lbs ground beef
1/2 onion, diced
2 T balsamic vinegar
3 T Noble Made BBQ Sauce (or your favorite BBQ Sauce), plus extra for coating the top
1/2 C almond flour
2 t garlic powder
3 T scallions, sliced, plus some extra for garnish
1 egg
2 t dijon mustard
2 t salt
1 t pepper
olive oil
INSTRUCTIONS
Preheat oven to 375 degrees.
Caramelize your onions by sautéing in a pan with olive oil on low heat for 10 minutes, add balsamic vinegar and continue cooking for 5 minutes.
While onions are cooking, prepare the rest of your meatloaf ingredients, in a large bowl combine ground beef, bbq sauce, almond flour, garlic powder, scallions, egg, dijon, salt, pepper and olive oil.
Once caramelized onions have cooled add them to the ground beef mixture, do not over mix meat too much. To bake, you can either free form meatloaf on a sheet pan, use a loaf pan or cook in a cupcake pan for mini grab and no meatloaves.
If making a large meatloaf bake for 45-50 minutes, let rest for at least 10 minutes, if making cupcakes bake for 20-25 minutes. I prefer my meatloaf cooked a little rare for reheating without drying it out.
Top meatloaf with extra BBQ Sauce and scallions.
