Banana Olive Oil Cake
Ingredients
3 ripe bananas
1 C brown sugar
3 eggs
1 t vanilla
1/2 c olive oil
1 C flour
1 C almond flour
1 t baking powder
1 t salt
1/2 C walnuts
1/4 C cocoa powder
INSTRUCTIONS
Preheat oven to 375 degrees.
Smash bananas in a bowl, Mix all wet ingredients into bananas, brown sugar, eggs, vanilla, olive oil.
Add add dry ingredients (flour, almond flour, baking powder and salt) and mix until just combined - separate batter into two bowls - mix cocoa powder in half and walnuts in the other half.
Pour 1/2 of the banana walnut mixture into a greased bundt pan, pour all of the chocolate mixture and top with the remaining banana walnut mixture and bake for 45 minutes until cooked through. (I didn’t bake long enough at first so I removed from the bundt pan and finished it on a sheet tray in the oven).
